Empanadas are great for a party as appetizers or as a meal served with warm refried beans on the side. There are a variety of empanadas out there, but the real fun is making them yourself. You get to play with your fillings. From a sweet empanada with apples and cinnamon to a savory empanada as I am going to share below.

Since the first of January I have been trying to eat healthier. The truth is Mexican food has gotten a bad rap for not being healthy, thanks to the many untraditional restaurants out there smothering the food with white cheese.
